It might sound strange to you but it works . Both of these are fermented products and packed with Umami. The synergy effect obtained by combining two different types of Umami increases its deliciousness of both ends. Hardly anyone in Japan knows about what Marmaite is, let alone how miraculously this international couple originating from different corners of the world work so well each others. Marmite is a yeast extract, a by-product of beer brewing. People say you either love it or hate it because of its strong yeasty flavor. In the UK and the Commonwealth countries, the most popular way to enjoy Marmite is to spread it thinly over toast together with butter. I would say it plays the similar role in the West to Japanese Natto, rather sticky and strong-smelling fermented soya beans that we Japanese consume along with our staple diet of rice. Once you develop a taste for the potent flavour of Natto, it can become quite addictive too. Marmite is best paired with equally powerful type of Sake, for example Junmai made with Omachi rice. Today I chose Sanzen Tokubetsu Junmai Omachi (Kikuchi Brewery) from Okayama prefecture - the origin of this ever so popular Omachi Rice which makes full bodied, quite rich and Umami-laden type of Sake. This Sake has been matured listening to Mozart. It has a settled aroma of cereals and, a concentrated sweet brown sugar syrup. The Natural sweetness of rice accentuate and make a great contrast with the saltiness of Marmite. On top of that, Marmite also enhances the flavor of Sake so you just can't stop sipping it. I recommend warming up the Sake to body temperature. This will help you enjoy the every sip of the drink at a different temperature until the Sake reaches the room temperature with slightly more concentrated flavor (Kanzamashi). As the flavour and aroma of the Sake open up and it becomes somewhat more potent when warmed up and instead of getting overpowered by the Marmite, it shines. マーマイトと雄町米純米酒日本酒とマーマイトの相性はは、意外な様ですがとても良く、 それは全く違った国から来た男女の幸せな国際結婚の様です。 両者ともに発酵食品であり、うまみ成分が沢山含まれており、 うまみの相乗効果を持ってして、一緒に食せば、おいしさが倍増する実は抜群の相性です。 日本ではあまり馴染みのないマーマイトですが、英国やその元植民地であったコモンウェルスの国々では、 トーストやビスケットにバターと供に薄く塗って食します。 ビールを作る過程の副産物で、言ってみればビールの酒粕、ビールの搾りかすを液状にしたものです。 マーマイトは塩気が強く、味わいが強いので、’Love it or hate it’(大好きか大嫌いか) というのがマーケティングのキャッチフレーズになっており、 最初は敬遠する人が多いですが、好きになると病み付きになる味です。 日本の納豆と同じような立ち居地かもしれません。 お酒も同等の力強く味わいの深いものをあわせます。 本日はご縁のあった岡山県 倉敷市の菊池酒造さんの 燦然 特別純米 雄町 をぬる燗で合わせます。 シリアルのような穀物の落ち着いた香りと凝縮した黒蜜のような甘い香りがあり 舌触りは酷がありながらも、なめらかです。 その発祥の地である岡山県産の雄町米の持つ、しっかりとしたお米の旨みが マーマイトの塩味をまろやかにし、同時にお酒の自然な甘みも引き立てます。 濃厚で腰の強いつくりがマーマイトの強い味わいに負けず劣らずで、お酒がどんどんすすみます。 お酒は温める事で味わいが増しますので、 ゆっくりと人肌ぐらいに温めてから常温になる’燗冷まし’までの過程を、 をそれぞれの温度で愉しむのも良いでしょう。
